Kathy at the fruit and veg shop in Tuahiwi knows a thing or two about cooking seasonal produce. Here’s her great recipe for a real warming winter soup.
Celeriac, Pumpkin, Potatoes in equal parts – depending on quantity you want this could be 250grammes of each to 1 kilo of each.
2 garlic cloves peeled and chopped
1 small can of coconut cream
Put root veggies in a pot with water to cover and boil.
Put coconut oil in frying pan, heat and add leeks, cook down, and then add garlic, cook down and then add 1/3 cup of water to catch all the flavours
Then mash all your boiled root veggies, add the leeks and garlic from frying pan, blend the whole lot then add small can of coconut cream and mix through
Serve with crusty bread
