I’m always on the look out for new, easy things to cook for dinner. It’s part of the reason I like popping into the fruit and veg shop at Tuahiwi. Not only do they have lots of organic and spray free produce, but Kathy who runs the place, always seems to have plenty of recipe ideas up her sleeve.
If you’re stuck for what to make for dinner, or don’t know how you could use a particular vegetable (I always get stuck on things like Jerusalem artichokes and swedes) – she’s always got some suggestions.
Yesterday I popped in for some carrots and capsicums. And I came away with some delicious homemade soup for dinner and an easy recipe.
Kathy’s currently selling homemade veggie soup in the shop in an effort to raise funds for vet bills for the family dog. Sadly, he got hit by two cars last week and is having some serious treatment to help him recover. So if you’re stuck for dinner at the last minute, pop in and buy some soup this week. Combine it with some crusty bread and you’ve got a lovely warming dinner for these chilly winter nights.
